Savoury porridge for tea…

Its been a while since I posted anything. I’ve been pretty busy with various bits and bobs – hopefully there will be something interesting to talk about soon.

I fancied savoury porridge for dinner. I’m not quite sure why. Google returned limited results and so I thought i’d see what I could do without its help. I was actually pretty damn pleased with the results. It’s quick, easy and very tasty. What follows is something like a risotto and something like ratatouille and something like porridge, but not much like any of them. Delicious!

  • 1 Onion chopped up small
  • 1 Courgette chopped into little cubes
  • 1 tin of tomatoes
  • A chunk of salami chopped into little cubes
  • About 150 ml of rolled oats
  • A good dash of worcester sauce
  • A good dash of tabasco

Fry the onions until soft. Chuck in the salami and the courgette and fry for a bit. Add the tomatoes and the oats. You’ll need to add about double the volume of boiling water as oats, but you can do this slowly as seems appropriate. Stir everything as the oats expand. Add the tabasco, worcester sauce and season to taste. Serve with strong cheddar on top!

You could probably leave out the salami and it would still be pretty good. 🙂
